In any POS system there must be a management for salesperson. This is so orders can be better tracked by salesperson. Currently the POS mode requires a "customer" to complete the order. This is nothing more than the create new order functionality in PS BO.

POS is supposed to handle walk-ins right? If it must be filled then the payment process will be slow and painful for staffs as they have to create a new customer profile just to complete the POS. Most customers are one off.

Pardon, I didn't quite catch, what do you mean?
Do you want to create order without customer?
In this case - how about to create "empty" customer - John Doe :-)
- in this case you'll be able to create order more quickly.

For example -with "customer auto-create" option.

Will John Doe be able to select whichever warehouse he is working right now? I don't see that function. Therefore, any POS entries made by John Doe will see stock deducted from whichever warehouse PS deems fit.

Have you ever used a POS system?

Let me put forward a question instead. Say in prestashop we have set up 2 warehouse. You know you can set up multiple warehouse in prestashop right?

Moving on, we have Y product that is 100 in qty. 30 of Y product is in Warehouse A, 70 of X product is in Warehouse B, therefore we have a global qty of 100 Product Y.

So we have a walk in customer to Warehouse B, he proceeds to buy 5pcs of Product Y over the counter. John Doe makes the sales using POS in Store Manager.

My question: How does POS know which warehouse (A or B) to decrease the QTY from?

According to your question:
1.POS with Advanced Stock Management is not implemented in Store Manager.
2. In the next Release ( stage 1) ASM will be added by following sections (products, combinations, export, import)
3. POS creation with ASM will be added on stage 2
