I have looked everywhere but when I try to either add a new product or edit existing on there seems to be no option to save?? here is screen shot of what im talking about:

Also when creating new product I see no where to upload the images. i guess i have to do that after the product is created. But again i cant even do that. once I fill out all the fields and close that screen no changes are made???

Try to resize the Edit Product dialog in order to see "Ok" and "Cancel" buttons below: http://screencast.com/t/abjViQj8mr2m
It looks like your screen resolution is 1366x768 and the Edit Product page can be resized to 800x670 pixels, so that should be enough.
