Yes, you can assign products to another category or add another tag to your items.

I try to better explain my question:
In Store manager I press CTRL+F and write text for search (e.g. white) It will find all item with "white" in name and i would like to associated all this items to new categorie "White items" but in searching options i cant see any function that will all me do this.

You can click at "Filter" button in order to arrange all found products in the main grid: http://screencast.com/t/BzliiMHmCmlt
Then you can perform any actions with the selected products (add them to the category, change price etc).
