The software uses improved IDs generation logic - when a product was deleted and you create a new product the software will generate ID autoincrement based in the last existing ID in the database not based on the deleted product ID This logic helps to avoid overloading your store with huge long IDs numbers in case you create and delete products very often or reimport big number of products
